Gaël Derrien: A chef with a starred career

At just 30 years of age, Gaël Derrien, chef of L'Écume, brings a breath of modernity and daring to the table. Trained at the École Hôtelière d'Avignon, he has distinguished himself in prestigious establishments such as Le George, the Shangri-La in Paris and Château Léognan. This talented chef has been awarded two Michelin stars in the course of his career, and advocates a cuisine that is both rooted in the terroir and enriched by his extensive travels.

A strong advocate of local produce, Gaël collaborates with artisans such as Michel Dubos and grows his own herbs. His dishes reflect a passion for authenticity, while incorporating touches of international inspiration.

L'Écume' s cuisine is distinguished by its ability to sublimate seasonal produce and local flavors. The menu features three dishes priced at €45:

  • La Terre: an exploration of local produce, with dishes such as Michel Dubos's duck with beet and fig.
  • La Mer: a tribute to the riches of the sea, wheresturgeon blends with beet and horseradish cream.
  • Le Végétal: an option featuring local vegetables such as eggplant and porcini, enhanced by a pepper sauce.

For a complete gastronomic experience, the Balade Épicurienne menu (€69) offers a five-course journey combining land and sea, with each dish accompanied by carefully selected food and wine pairings (from €25 to €55).
